Annatto is derived from the seeds of the achiote tree (Bixa Orellana). It is not only used as a natural dye for fabric but also as a color enhancer for various food products such as cheese. The color is found in the reddish waxy seeds and comes from various carotenoid pigments, mainly bixin and norbixin. The achiote tree is found in tropical regions.
